been a while since I've updated this page. Here's another
simple, delicious dish Tabouli (I
know this isn't the real name for it, but the
results are YUM!)
2 large
bunches parsley, finely chopped
1/4 cup (or less) bulgar wheat, soaked in warm water about 1/2
hour
1 small onion, finely chopped
1 small tomato, cut into small cubes
1/2 bell pepper, cut into small cubes
olive oil
juice of 1-2 lemons
salt
Mix
parsley and vegetables. Squeeze excess water from bulgar and
add to parsley mixture. Add enough olive oil to coat mixture
lightly, toss. Add lemon juice and salt to taste.
Place
into serving dish.
Serve with warm pita bread.
Warm Pita Bread (If
you don't make your own pita bread, you can
create a reasonably good facsimile with this
technique.)
Ingredients:
Store-bought
pita bread
Water
Large cast iron frying pan in an oven pre-heated
to 450 degrees
or a toaster oven
Method:
Wet
pita bread with water on both sides, but don't
soak. Immediately place on heated cast-iron pan
until water has been absorbed. Or toast on medium
light and let sit in toaster a few minutes until
all water is absorbed. Pay close attention when
using this method as the pita can go from wet to
rubbery in a matter of seconds. If they happen to
get rubbery then just toast them and serve as
pita chips.
